This sparkling rosé was made from Pinot Noir grapes from a small vineyard called Morning Mist where Dan has been consulting in organic and biodynamic farming practices. Morning Mist is in theMcMinnville AVA and sits at 700’ elevation facing directly into the VanDuzer Corridor. It is very likely one of the latest ripening vineyards in all of the Willamette Valley, making it a perfect site for sparkling wine! The fruit was picked relatively early, at lower sugars and higher acidity.
Unfiltered, contains lees – pour off slowly or invert to evenly distribute.
Bottled via the Pétillant-naturel or méthode ancestrale, process. This process is where the product is bottled before it finishes it’s final fermentation, thus producing a naturally carbonated beverage. Wild fermented, no sulfur added
